Description
A decadent and satisfying creamy Cajun shrimp pasta that combines the flavors of shrimp and andouille sausage with a rich, creamy sauce.
Ingredients
- 2 servings pappardelle pasta
- 6 shrimp (peeled and deveined)
- 1/2 tsp Cajun seasoning
- 2 andouille sausages
- 1.5 tbsp butter
- 1.5 tbsp neutral oil
- 1 small onion (diced)
- 4 cloves garlic (sliced)
- 1 1/4 cups heavy cream
- 2 tsp Cajun seasoning
- 1 tsp lemon pepper
- 2 tsp paprika
- 1 tsp chili powder (optional)
- 3 tsp sugar
- 1.5 tsp dried oregano
- 1 tbsp lemon juice
- 1/3 cup grated parmesan
- 1 tbsp butter (for finishing)
- Grated parmesan (for topping)
- Parsley (for garnishing)
Instructions
- Boil the pasta per the package instructions and reserve about 1/4 cup of the pasta water.
- Season the shrimp, ensuring they are pat dry, with 1/2 teaspoon of Cajun seasoning.
- In a large frying pan, pan fry the sliced sausage until cooked through. Remove the sausage from the pan and set aside.
- Using the same pan, melt 1/2 tablespoon of butter in 1/2 tablespoon of neutral oil over medium heat. Once hot, add the shrimp and cook for 2 minutes on each side, then remove from the pan.
- In the same pan, melt 1 tablespoon of butter in 1 tablespoon of oil over medium heat. Once melted, add the diced onions and sliced garlic. Sauté until the onion turns translucent.
- Pour in the heavy cream, bringing it to a simmer. Once simmering, add the remaining Cajun seasoning, lemon pepper, paprika, chili powder (if using), sugar, and dried oregano. Stir until everything is well combined.
- Allow the sauce to continue cooking until it reaches a gentle boil, stirring occasionally.
- Add the reserved pasta water and the cooked pasta. Stir until each piece is evenly coated, then add the lemon juice and stir again.
- Finish the dish by adding the remaining butter, shrimp, and sausages back into the mixture. Stir for another minute and turn off the heat.
- Add more grated parmesan cheese on top and garnish with freshly chopped parsley. Serve hot.
