Description

Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
  3. Add the shrimp and Cajun seasoning, cooking until the shrimp are pink and opaque, about 4-5 minutes.
  4. Pour in the chicken broth and bring to a gentle simmer. Stir in the heavy cream and cherry tomatoes, cooking for an additional 2-3 minutes until the sauce thickens slightly.
  5. Add the cooked pasta to the skillet, tossing to combine. Stir in the Parmesan cheese and season with salt and pepper to taste.
