Ingredients
- 8 oz pasta (penne or fettuccine)
- 1 lb shrimp (peeled and deveined)
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup cherry tomatoes (halved)
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
- Add the shrimp and Cajun seasoning, cooking until the shrimp are pink and opaque, about 4-5 minutes.
- Pour in the chicken broth and bring to a gentle simmer. Stir in the heavy cream and cherry tomatoes, cooking for an additional 2-3 minutes until the sauce thickens slightly.
- Add the cooked pasta to the skillet, tossing to combine. Stir in the Parmesan cheese and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
