A comforting and flavorful dish that combines baked potatoes with creamy Cajun shrimp, broccoli, and Parmesan cheese.
Ingredients
- 4 Russet potatoes
- 1 lb Shrimp (peeled and deveined)
- 1 cup Heavy cream
- 1 cup Broccoli (cooked and chopped)
- 1/2 cup Parmesan cheese (shredded)
- 2 tbsp Cajun seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the russet potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
- In a skillet, sauté shrimp with Cajun seasoning until cooked through.
- Add heavy cream and bring to a simmer. Stir in cooked broccoli and melt in Parmesan cheese.
- Once potatoes are done, cut them open and fluff the insides with a fork.
- Top each potato with the creamy shrimp mixture.
- Serve warm and enjoy!
