Description

A comforting and flavorful dish that combines baked potatoes with creamy Cajun shrimp, broccoli, and Parmesan cheese.


Ingredients

  • 4 Russet potatoes
  • 1 lb Shrimp (peeled and deveined)
  • 1 cup Heavy cream
  • 1 cup Broccoli (cooked and chopped)
  • 1/2 cup Parmesan cheese (shredded)
  • 2 tbsp Cajun seasoning
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the russet potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
  3. In a skillet, sauté shrimp with Cajun seasoning until cooked through.
  4. Add heavy cream and bring to a simmer. Stir in cooked broccoli and melt in Parmesan cheese.
  5. Once potatoes are done, cut them open and fluff the insides with a fork.
  6. Top each potato with the creamy shrimp mixture.
  7. Serve warm and enjoy!
