Ingredients

  • 1 1/2 pounds (680 g) cod fillets (680 grams)
  • 1/2 cup (120 ml) dried cranberries (70 grams)
  • 1/2 cup (120 ml) pecans, chopped (60 grams)
  • 1/4 cup (60 ml) panko breadcrumbs (30 grams)
  • 1/4 cup (60 ml) cheddar cheese, grated (25 grams)
  • 2 tablespoons (30 ml) fresh parsley, chopped (8 grams)
  • 2 tablespoons (30 ml) beef tallow, melted (28 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 1 teaspoon (5 ml) onion powder (2 grams)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 grams)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the cod fillets on the prepared baking sheet.
  4. In a bowl, combine dried cranberries, chopped pecans, and panko breadcrumbs.
  5. Add grated Parmesan cheese and chopped parsley to the mixture.
  6. Pour melted butter over the ingredients in the bowl.
  7. Drizzle olive oil over the mixture and stir to combine.
  8. Add lemon juice, garlic powder, salt, and black pepper to the mixture.
