- 1/4 cup (60 ml) cheddar cheese, grated (25 grams)
- 2 tablespoons (30 ml) fresh parsley, chopped (8 grams)
- 2 tablespoons (30 ml) beef tallow, melted (28 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- 1 teaspoon (5 ml) onion powder (2 grams)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 grams)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Place the cod fillets on the prepared baking sheet.
- In a bowl, combine dried cranberries, chopped pecans, and panko breadcrumbs.
- Add grated Parmesan cheese and chopped parsley to the mixture.
- Pour melted butter over the ingredients in the bowl.
- Drizzle olive oil over the mixture and stir to combine.
- Add lemon juice, garlic powder, salt, and black pepper to the mixture.
- Mix well until all ingredients are evenly combined.
- Press the cranberry pecan mixture onto the top of each cod fillet.
