Ingredients
- 450 grams shrimp, peeled and deveined
- 60 grams breadcrumbs
- 60 milliliters orange juice
- 1 tablespoon (15 ml) orange zest
- 30 grams dried cranberries, chopped
- 2 green onions, finely chopped
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) ground ginger
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 tablespoon (15 ml) vegetable oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Chop the shrimp into small pieces and place them in a large mixing bowl.
- Add breadcrumbs, orange juice, and orange zest to the shrimp.
- Stir in the chopped dried cranberries and finely chopped green onions.
- Crack the egg into the bowl and mix until well combined.
- Add minced garlic, ground ginger, salt, and black pepper to the mixture.
- Mix all ingredients thoroughly until evenly distributed.
- Shape the mixture into 1-inch meatballs using your hands.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the shrimp meatballs to the skillet in batches.
- Cook the meatballs for about 2-3 minutes on each side until golden brown.
- Transfer the browned meatballs to a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 10-12 minutes until cooked through.
- Remove from the oven and let them cool slightly before serving.
