Ingredients

  • 450 grams shrimp, peeled and deveined
  • 60 grams breadcrumbs
  • 60 milliliters orange juice
  • 1 tablespoon (15 ml) orange zest
  • 30 grams dried cranberries, chopped
  • 2 green onions, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ground ginger
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 tablespoon (15 ml) vegetable oil for frying


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the shrimp into small pieces and place them in a large mixing bowl.
  3. Add breadcrumbs, orange juice, and orange zest to the shrimp.
  4. Stir in the chopped dried cranberries and finely chopped green onions.
  5. Crack the egg into the bowl and mix until well combined.
  6. Add minced garlic, ground ginger, salt, and black pepper to the mixture.
  7. Mix all ingredients thoroughly until evenly distributed.
  8. Shape the mixture into 1-inch meatballs using your hands.
  9. Heat the vegetable oil in a large skillet over medium heat.
  10. Add the shrimp meatballs to the skillet in batches.
  11. Cook the meatballs for about 2-3 minutes on each side until golden brown.
  12. Transfer the browned meatballs to a baking sheet lined with parchment paper.
  13. Bake the meatballs in the preheated oven for 10-12 minutes until cooked through.
  14. Remove from the oven and let them cool slightly before serving.
