Ingredients
- 1 lb shrimp, peeled and deveined (450 g)
- 8 oz cream cheese, softened (225 g)
- 1/2 cup cranberries, chopped (50 g)
- 1 jalapeño, seeded and finely chopped
- 1 tablespoon honey (15 ml)
- 1 tablespoon lime juice (15 ml)
- 1/4 teaspoon salt (1.5 g)
- 1/4 teaspoon black pepper (1.5 g)
- 1/4 cup cilantro, chopped (15 g)
- 24 mini phyllo shells
Instructions
- Preheat the oven to 350°F (175°C).
- Place the shrimp on a baking sheet.
- Season the shrimp with salt and black pepper.
- Bake the shrimp in the oven for 8-10 minutes, until pink and cooked through.
- Remove the shrimp from the oven and let them cool slightly.
- Chop the cooked shrimp into small pieces.
- In a bowl, mix cream cheese, chopped cranberries, and jalapeño.
- Stir in honey and lime juice until well combined.
- Add chopped shrimp to the cream cheese mixture.
- Stir in the chopped cilantro until evenly distributed.
- Arrange the phyllo shells on a serving platter.
- Spoon the shrimp mixture into each phyllo shell.
