Ingredients

- 1 cup (240 ml) cranberries, fresh or frozen (100 grams)
- 1/4 cup (60 ml) honey (60 milliliters)
- 2 tablespoons (30 ml) soy sauce (30 milliliters)
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- 1 clove garlic, minced
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 tablespoon (15 ml) water (15 milliliters)
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the salmon fillets and pat them dry with paper towels.
- Season the salmon fillets with salt and black pepper.
- Place the salmon on a baking sheet lined with parchment paper.
- In a saucepan, combine cranberries, honey, soy sauce, lemon juice, minced garlic, and water.
- Cook over medium heat until cranberries burst and mixture thickens, about 10 minutes.
- Remove the cranberry glaze from heat and let it cool slightly.
- Brush salmon fillets with olive oil.
- Spoon cranberry glaze evenly over the salmon fillets.
- Bake the salmon for 12-15 minutes, or until cooked through.
- Remove from the oven and let it rest for a couple of minutes.
