  • 1/4 cup (60 ml) honey (60 milliliters)
  • 2 tablespoons (30 ml) soy sauce (30 milliliters)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 1 clove garlic, minced
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1.25 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 tablespoon (15 ml) water (15 milliliters)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the salmon fillets and pat them dry with paper towels.
  3. Season the salmon fillets with salt and black pepper.
  4. Place the salmon on a baking sheet lined with parchment paper.
  5. In a saucepan, combine cranberries, honey, soy sauce, lemon juice, minced garlic, and water.
  6. Cook over medium heat until cranberries burst and mixture thickens, about 10 minutes.
  7. Remove the cranberry glaze from heat and let it cool slightly.
  8. Brush salmon fillets with olive oil.
  9. Spoon cranberry glaze evenly over the salmon fillets.
  10. Bake the salmon for 12-15 minutes, or until cooked through.
  11. Remove from the oven and let it rest for a couple of minutes.
  12. Serve the cranberry glazed salmon warm.

Notes

  • For a more intense garlic flavor, consider adding an additional clove of minced garlic to the cranberry glaze.
  • Add a touch of spiciness by sprinkling red pepper flakes over the salmon before baking.
  • Ensure frozen cranberries are thawed before cooking to allow them to burst and thicken the glaze effectively.
