Ingredients
- 1 loaf Crusty Italian bread
- 1 pound (454 g) Fresh shrimp, peeled and deveined
- 1 cup (240 ml) Cream cheese, softened
- 1/2 cup (120 ml) Shredded mozzarella cheese
- 1/4 cup (60 ml) Fresh parsley, chopped
- 4 cloves Garlic, minced
- 1/4 cup (60 ml) Vegetable oil, melted
- Salt and pepper, to taste
- Red pepper flakes (optional )
Instructions
- Set your oven to 375°F (190°C) and cover a baking tray with parchment paper for easier cleaning afterward.
- With a serrated knife, cut the Italian bread into rounds that are 2 inches thick, then carefully remove the center of each piece, leaving enough bread to maintain its shape.
- In a pan over medium heat, heat half of the vegetable oil. Add the shrimp, season with salt, pepper, and a dash of red pepper flakes if you prefer some heat. Cook for 2-3 minutes until they turn pink and become opaque. Take them off the heat, chop them into pieces, and let them cool for a short while.
- Mix the softened cream cheese, shredded mozzarella, chopped parsley, minced garlic, and the cooled shrimp in a bowl. Blend until everything is smoothly combined.
- Fill each bread round with the shrimp and cheese mixture, pressing it in to ensure it’s well-packed. Place each filled bread piece, with the open side facing up, on the baking tray.
- Pour the rest of the melted vegetable oil over the tops and sides of the bread rounds. Add a bit more mozzarella on top if you wish.
- Bake them for 15-18 minutes until the bread turns a golden brown and the filling is bubbly with a light browning.
- Allow them to cool for a few minutes before serving, as they will be hot and tempting!
