  • 1/2 cup milk (120 ml)
  • 1 cup fresh or canned corn kernels (170 g)
  • 1/2 cup chopped green onions (30 g)
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup cooked beef meat (120 g)
  • Vegetable oil for frying
  • For the Lime Aioli:
  • 1/2 cup mayonnaise (120 g)
  • 1 tablespoon lime juice (15 ml)
  • 1 teaspoon lime zest (2 g)
  • 1 small garlic clove, minced


Instructions

  1. In a mixing bowl, combine flour, baking powder, salt, and black pepper.
  2. In a separate bowl, whisk together eggs and milk until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
  4. Fold in corn kernels, green onions, chopped jalapeño, and crab meat. Mix until evenly distributed.
  5. Heat vegetable oil in a large skillet over medium heat until shimmering.
  6. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.
