Ingredients
- 1 box Cheddar Bay Biscuit Mix
- 1 tsp (5 ml) Italian seasoning
- 1 tsp (5 ml) Minced garlic
- 1 lb (454 g) Lump crab meat
- 1/2 c Mayonnaise
- 1/4 tsp (1 ml) Paprika
- 1 tbsp (15 ml) Dijon mustard
- 1/2 tsp (3 ml) Onion powder
- 1/2 Tube Ritz crackers crushed finely
- 1 c Parmesan cheese grated
- Salt and pepper to taste
- 2 tbsp (30 ml) Melted butter
- 1 tsp (5 ml) Lemon juice
Instructions
- Preheat your oven to 375 degrees and thoroughly coat a muffin pan with non-stick spray.
- Prepare the biscuit mix following the package directions, and incorporate the Italian seasoning and minced garlic.
- Combine the crab meat, paprika, mayonnaise, Dijon mustard, onion powder, Parmesan cheese, cracker crumbs, and season with salt and pepper in a separate bowl.
- Lightly dust your hands with flour. Take a portion of the biscuit mixture and shape it into a small bowl-like form in your hand.
- Spoon some of the crab filling mixture into the center of the biscuit bowl.
- Enclose the filling by adding a little more biscuit mix on top.
- Place each prepared biscuit into the muffin tin and let them bake for 12-15 minutes.
- Mix the melted butter with lemon juice in a small bowl.
- Before serving, brush the lemon butter over the tops of the baked biscuits.
