Description

A rich, creamy bisque made with tender crab meat, shrimp, and scallops, infused with garlic and thyme for a luxurious seafood experience.


Ingredients

  • 1 lb crab meat
  • 1 lb mixed seafood (shrimp, scallops, etc.)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups fish stock
  • 1 cup heavy cream
  • 1/4 cup sherry (optional)
  • 2 tbsp butter
  • 1 tsp thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the crab meat and mixed seafood, cooking for a few minutes until the seafood is just cooked.
  4. Pour in the fish stock and bring to a simmer.
  5. Add thyme, salt, and pepper. Let it simmer for about 10 minutes.
  6. Stir in the heavy cream and sherry, if using, and cook for an additional 5 minutes.
  7. Adjust seasoning if needed.
  8. Serve hot, garnished with chopped parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative. Ensure not to overcook seafood to maintain tenderness.
