Description

A refreshing crab salad that blends creamy imitation crab with crisp vegetables for a delightful taste.

Ingredients

  • 1 lb crab stick
  • ½ large English cucumber (julienned)
  • 1 large carrot (julienned)
  • ½ cup Japanese mayonnaise (or regular mayo)
  • 1 ½ tablespoons lemon juice (or more)
  • Salt & pepper (to taste)
  • 2 teaspoons sriracha (optional, for spice)

Instructions

  1. Make the Dressing: In a small bowl, combine the Japanese mayonnaise and lemon juice. Whisk until smooth, adding sriracha for spice if desired. Adjust seasoning with salt and pepper.
  2. Shred the Crab Stick: Shred the imitation crab stick into thin pieces for texture.
  3. Toss and Serve: In a large bowl, mix the shredded crab stick, julienned carrots, and cucumber. Pour the dressing over and gently toss to combine. Serve immediately.

Notes

Chill ingredients before mixing for a refreshing experience. Consider adding avocado or sesame seeds for variations.
