Ingredients
- 1 lb crab stick
- ½ large English cucumber (julienned)
- 1 large carrot (julienned)
- ½ cup Japanese mayonnaise (or regular mayo)
- 1 ½ tablespoons lemon juice (or more)
- Salt & pepper (to taste)
- 2 teaspoons sriracha (optional, for spice)
Instructions
- Make the Dressing: In a small bowl, combine the Japanese mayonnaise and lemon juice. Whisk until smooth, adding sriracha for spice if desired. Adjust seasoning with salt and pepper.
- Shred the Crab Stick: Shred the imitation crab stick into thin pieces for texture.
- Toss and Serve: In a large bowl, mix the shredded crab stick, julienned carrots, and cucumber. Pour the dressing over and gently toss to combine. Serve immediately.
