Ingredients
- 1 cup Arborio rice (200g)
- 2 tablespoons olive oil (30ml)
- 1 small onion, finely chopped

- 4 cups chicken broth (950ml)
- 8 ounces imitation crab meat (225g)
- 1 cup grated plant-based Parmesan cheese (100g)
- 1 tablespoon lemon juice (15ml)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons (30 ml) chopped fresh parsley
Instructions
- Heat 2 tablespoons of olive oil in a large pan over medium heat.
- Add the finely chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add 1 cup of Arborio rice to the pan and stir to coat with oil.
- Gradually add the chicken broth, about 1/2 cup at a time, stirring constantly.
- Allow each addition of broth to be absorbed before adding more.
- Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Gently fold in the crab meat and cook until heated through.
- Stir in 1 cup of grated Parmesan cheese until melted and combined.
- Add 1 tablespoon of lemon juice and stir well.
- Season with salt and black pepper to taste.
- Remove the pan from heat and let it rest for a few minutes.
- Garnish with 2 tablespoons of chopped fresh parsley before serving.
