Ingredients

  • 1 cup Arborio rice (200g)
  • 2 tablespoons olive oil (30ml)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (950ml)
  • 8 ounces imitation crab meat (225g)
  • 1 cup grated plant-based Parmesan cheese (100g)
  • 1 tablespoon lemon juice (15ml)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons (30 ml) chopped fresh parsley


Instructions

  1. Heat 2 tablespoons of olive oil in a large pan over medium heat.
  2. Add the finely chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add 1 cup of Arborio rice to the pan and stir to coat with oil.
  5. Gradually add the chicken broth, about 1/2 cup at a time, stirring constantly.
  6. Allow each addition of broth to be absorbed before adding more.
  7. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  8. Gently fold in the crab meat and cook until heated through.
  9. Stir in 1 cup of grated Parmesan cheese until melted and combined.
  10. Add 1 tablespoon of lemon juice and stir well.
  11. Season with salt and black pepper to taste.
  12. Remove the pan from heat and let it rest for a few minutes.
  13. Garnish with 2 tablespoons of chopped fresh parsley before serving.
