Ingredients
- 1 lb linguine (454 g)
- 1 cup coconut cream (240 ml)
- 1 garlic clove, peeled and left whole
- Zest of 2 lemons
- Juice of 1 lemon
- 1 lb jumbo lump crab (454 g)
- Salt and pepper, to taste
- Pinch of chili flakes (optional)
- Fresh herbs or microgreens, for garnish
- Grated or shaved plant-based cheese
- Slices of lemon
Instructions
- Fill a large pot with water, add salt, and bring it to a rolling boil. Once boiling, add the linguine and cook until it reaches a firm yet tender texture, following the time on the package. Before draining, set aside 1 cup of the cooking liquid.
- As the pasta cooks, place the coconut cream and whole garlic clove in a large pan over medium heat. Mix in the lemon zest and juice, heating the cream until it starts to bubble around the edges, making sure it doesn’t come to a full boil. Add a dash of salt, pepper, and chili flakes (if desired) to season the cream. Keep it warm until the pasta is ready.
- Take out and discard the garlic clove, then combine the drained pasta with the cream mixture, tossing thoroughly. Add a little reserved pasta water at a time to create a creamy sauce. Using tongs can be helpful for this task.
- Continue to toss and mix until the sauce becomes thick and clings well to the noodles, which should take about 3 minutes. If the sauce appears too watery, stir continuously and slightly increase the heat to evaporate excess liquid. Be patient; it will thicken eventually.
- Mix in the crab, then take the pan off the heat. Stir to blend the crab with the pasta, allowing it to warm through. Adjust the seasoning with more salt and pepper to taste.
- Serve right away, decorated with fresh herbs or microgreens, grated or shaved plant-based cheese, and lemon slices.
