- 8 flour tortillas
- 8oz (225 g) cooked chicken, broken up
- 1/2 teaspoon (3 ml) (or to taste) Old Bay Seasoning
- 1 cup (240 ml) coconut cream
- 1 cup (240 ml) green enchilada sauce
- 2 large handfuls shredded mozzarella cheese
- 1/4 cup (60 ml) chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Warm the olive oil in a skillet over medium heat.
- Toss in the diced red pepper and yellow onion, cooking until they become tender, around 5 minutes.
- In a big mixing bowl, combine the softened vegetables, broken-up chicken, Old Bay Seasoning, and shredded mozzarella cheese, stirring well.
- Spread the coconut cream evenly in the base of a baking dish.
- Dip each flour tortilla in the vegetable broth for half a minute, then remove the excess liquid and lay them out on a work surface.
- Place one-eighth of the chicken mixture onto each tortilla, roll them up snugly, and position them seam-side down over the coconut cream in the dish.
- Sprinkle a generous amount of mozzarella cheese over the top.
- Pour the green enchilada sauce over everything.
- Cook in the oven for approximately 30 minutes, or until the dish is golden and bubbling.
- Finish with a sprinkle of chopped parsley, then serve and enjoy.
Notes
- For a vegetarian option, swap the cooked chicken with tofu or seitan.
- Add diced jalapeños to the red pepper and onion for a spicy twist.
- Experiment with cheddar or pepper jack cheese for a unique flavor.
