Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 1 red pepper, diced
  • 1/2 yellow onion, diced
  • 1 cup (240 ml) vegetable broth
  • 8 flour tortillas
  • 8oz (225 g) cooked chicken, broken up
  • 1/2 teaspoon (3 ml) (or to taste) Old Bay Seasoning
  • 1 cup (240 ml) coconut cream
  • 1 cup (240 ml) green enchilada sauce
  • 2 large handfuls shredded mozzarella cheese
  • 1/4 cup (60 ml) chopped parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Warm the olive oil in a skillet over medium heat.
  3. Toss in the diced red pepper and yellow onion, cooking until they become tender, around 5 minutes.
  4. In a big mixing bowl, combine the softened vegetables, broken-up chicken, Old Bay Seasoning, and shredded mozzarella cheese, stirring well.
  5. Spread the coconut cream evenly in the base of a baking dish.
  6. Dip each flour tortilla in the vegetable broth for half a minute, then remove the excess liquid and lay them out on a work surface.
  7. Place one-eighth of the chicken mixture onto each tortilla, roll them up snugly, and position them seam-side down over the coconut cream in the dish.
  8. Sprinkle a generous amount of mozzarella cheese over the top.
  9. Pour the green enchilada sauce over everything.
  10. Cook in the oven for approximately 30 minutes, or until the dish is golden and bubbling.
  11. Finish with a sprinkle of chopped parsley, then serve and enjoy.
