  • 1 large egg beaten

  • 1 tablespoon (15 ml) fresh parsley chopped
  • 1/2 teaspoon (3 ml) Worcestershire sauce
  • 1 pound (454 g) crab meat picked over for shells
  • 12 egg roll wrappers
  • Vegetable oil for frying


Instructions

  1. In a mixing bowl, combine the mayonnaise, beaten egg, Old Bay seasoning, lemon juice, chopped parsley, and Worcestershire sauce.
  2. Carefully incorporate the crab meat into the mixture until it is fully blended.
  3. Lay an egg roll wrapper on a clean surface in front of you, positioned like a diamond. Place roughly 2 tablespoons of the crab mixture onto the bottom half of the wrapper. Fold the bottom corner over the filling, tuck in the sides, and roll it up tightly. Use a little water to seal the top corner.
