Ingredients

  • 1 pound (454 g) (450 grams) crab meat
  • 1 pound (454 g) (450 grams) shrimp, peeled and deveined
  • 4 large bell peppers
  • 1 cup (240 ml) (200 grams) cooked rice
  • 1/2 cup (120 ml) (120 milliliters) mayonnaise
  • 1/4 cup (60 ml) (60 milliliters) sour cream
  • 1 cup (240 ml) (100 grams) shredded mozzarella cheese
  • 1/2 cup (120 ml) (50 grams) grated plant-based Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) (15 milliliters) lemon juice
  • 1 tablespoon (15 ml) (15 grams) vegetable oil
  • 1 teaspoon (5 ml) (5 grams) paprika
  • 1 teaspoon (5 ml) (5 grams) salt
  • 1/2 teaspoon (3 ml) (2.5 grams) black pepper
  • 1/4 teaspoon (1 ml) (1.25 grams) cayenne pepper
  • 2 tablespoons (30 ml) (30 grams) chopped fresh parsley


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. Place the bell peppers in a baking dish, cut side up.
  4. Melt the butter in a pan over medium heat.
  5. Add the chopped onion and minced garlic to the pan.
  6. Sauté until the onion is translucent, about 3-4 minutes.
  7. Add the shrimp to the pan and cook until pink and opaque.
  8. Remove the shrimp from the pan and chop them into small pieces.
  9. In a large bowl, combine the crab meat, chopped shrimp, and cooked rice.
  10. Add the mayonnaise, sour cream, lemon juice, and sautéed onion mixture.
  11. Stir in the paprika, salt, black pepper, and cayenne pepper.
  12. Mix well to combine all ingredients thoroughly.
  13. Stuff each bell pepper with the crab and shrimp mixture.
  14. In a small bowl, combine the mozzarella and Parmesan cheeses.
  15. Top each stuffed pepper with the cheese mixture.
  16. Cover the baking dish with foil.
  17. Bake in the preheated oven for 25 minutes.
  18. Remove the foil and bake for an additional 10-15 minutes, until the cheese is golden and bubbly.
  19. Remove the stuffed peppers from the oven and let them cool slightly.
