Description

Ingredients

  • 1/2 pound cooked shrimp (peeled, deveined, and chopped)
  • 1/2 pound cooked crab meat (shells removed)
  • 1 tbsp olive oil
  • 1/4 cup celery (finely chopped)
  • 1/4 cup carrot (finely chopped)
  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 cup all-purpose flour
  • 2 tbsp tomato paste
  • 4 cups seafood or chicken broth
  • 1 cup heavy cream
  • 2 tbsp sherry (optional)
  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh herbs (parsley, chives, or dill for garnish)


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped celery, carrot, and onion, sautéing for about 5 minutes until softened.
  2. Incorporate the minced garlic for an additional minute, allowing the flavors to meld beautifully.
  3. Stir in the tomato paste, paprika, and optional cayenne pepper. Cook this mixture for 1-2 minutes; this step caramelizes the tomato paste and blooms the spices for a richer flavor.
  4. Sprinkle the flour over the vegetables and stir for 2 minutes to form a roux.
  5. Slowly pour in the seafood or chicken broth while whisking to prevent lumps from forming. Bring the mixture to a simmer.
  6. Let the bisque simmer for 10-12 minutes, allowing it to thicken. Stir in sherry if you choose to use it, enhancing the flavor.
  7. Lower the heat to medium-low and pour in the heavy cream, stirring to combine.
  8. Gently fold in the chopped shrimp and crab meat. Cook for an additional 5 minutes just to heat everything through.
  9. Season your bisque with salt and black pepper to taste.
  10. Ladle the soup into bowls and garnish it with freshly chopped herbs. Serve hot and enjoy!
