Ingredients

  • 1 box (525 g) corn bread mix (Jiffy used in this recipe)
  • 1 can (249 g) whole kernel corn, drained
  • 1 tablespoon (15 ml) Old Bay Seasoning
  • 1/4 cup (60 ml) Sour Cream
  • 8 ounces (226 g) imitation crab meat, picked clean
  • Vegetable oil for frying


Instructions

  1. Heat up 2 inches of vegetable oil or set a deep fryer to 350°F.
  2. Combine the corn bread mix and Old Bay seasoning in a bowl.
  3. Whisk the egg, then incorporate it into the dry mixture.
  4. Pour in the tonic water and gently mix it into the batter.
  5. Carefully fold in the imitation crab meat.
  6. Drop spoonfuls of the mixture into the hot oil using a small cookie scoop.
  7. Fry each side for about 1 to 2 minutes.
  8. Place the fritters on a paper towel to remove excess oil. Sprinkle with more Old Bay seasoning before serving.
