Ingredients
- 1 box (525 g) corn bread mix (Jiffy used in this recipe)
- 1 can (249 g) whole kernel corn, drained
- 1 tablespoon (15 ml) Old Bay Seasoning
- 1/4 cup (60 ml) Sour Cream
- 8 ounces (226 g) imitation crab meat, picked clean
- Vegetable oil for frying
Instructions
- Heat up 2 inches of vegetable oil or set a deep fryer to 350°F.
- Combine the corn bread mix and Old Bay seasoning in a bowl.
- Whisk the egg, then incorporate it into the dry mixture.
- Pour in the tonic water and gently mix it into the batter.
- Carefully fold in the imitation crab meat.
- Drop spoonfuls of the mixture into the hot oil using a small cookie scoop.
- Fry each side for about 1 to 2 minutes.
- Place the fritters on a paper towel to remove excess oil. Sprinkle with more Old Bay seasoning before serving.
