A quick and nutritious cottage cheese tuna salad that’s perfect for lunch or light dinner, combining creamy cottage cheese with tuna and crunchy vegetables.
Ingredients
- 3 (5 oz) cans of white albacore tuna, drained well
- 1/3-1/2 cup cottage cheese
- 1 stalk celery, minced
- 3 tbsp red onion, minced
- 2-3 tbsp dill pickles or sweet pickles, minced
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- 1 garlic clove, finely minced or microplaned
- 2 tbsp fresh herbs (chives, parsley, or dill)
- 1/4 tsp salt
- 1/2 tsp black pepper
- Hot sauce (optional, to taste)
Instructions
- Blend the cottage cheese using a blender or immersion blender until smooth and creamy.
- In a medium bowl, combine the drained tuna, blended cottage cheese, minced celery, red onion, pickles, Dijon mustard, lemon juice, garlic, fresh herbs, salt, and pepper.
- Add hot sauce to taste, if desired.
- Mix thoroughly to ensure everything is well incorporated. Adjust seasoning as needed and serve.
Notes
Chill the ingredients to enjoy a refreshingly cool salad. Allow the salad to sit in the fridge for about an hour before serving to meld the flavors.
