Description

A refreshing and flavorful shrimp ceviche perfect for summer gatherings and family dinners.


Ingredients

  • 1 pound shrimp (peeled and deveined)
  • 2 cups freshly squeezed lime juice
  • 1 cup diced red onion
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced jalapeño
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper to taste


Instructions

  1. Cook the shrimp in boiling salted water until pink and opaque, about 2-3 minutes.
  2. Immediately transfer the shrimp to an ice bath to stop the cooking process.
  3. Once chilled, chop the shrimp into bite-sized pieces.
  4. In a large bowl, combine the cooked shrimp, lime juice, red onion, tomatoes, cucumber, jalapeño, and cilantro.
  5. Season with salt and pepper to taste, adjusting to your preference.
  6. Mix thoroughly and allow to sit for at least 30 minutes to let the flavors meld.

Notes

For extra texture, consider adding diced avocado just before serving. Serve with tortilla chips for a crunchy contrast.
