Description

A refreshing cold shrimp pasta salad filled with vibrant ingredients, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (such as rotini or penne)
  • 1 lb shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lemon, juiced and zested
  • 2 tbsp fresh dill, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup celery, diced


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a skillet, cook the shrimp over medium heat until pink and opaque, about 2-3 minutes per side. Let cool.
  3. In a mixing bowl, whisk together mayonnaise, sour cream, lemon juice, lemon zest, dill, and garlic. Season with salt and pepper.
  4. In a large bowl, combine the cooled pasta, shrimp, cherry tomatoes, red onion, and celery.
  5. Pour the dressing over the pasta salad and toss to combine.
