A delicious cod dish simmered in a vibrant roasted red pepper sauce, perfect for busy weeknights.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups roasted red peppers (or fresh red bell peppers)
- 1 cup vegetable broth (or chicken broth)
- 1 teaspoon smoked paprika (or regular paprika if necessary)
- 1 teaspoon dried oregano (or fresh oregano for a more vibrant flavor)
- Salt and pepper to taste
- 4 fillets of cod (or tilapia or haddock as substitutes)
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for one more minute, allowing the flavors to meld.
- Add the roasted red peppers and vegetable broth to the skillet. Blend well and let it simmer for about 5 minutes.
- Stir in the smoked paprika, dried oregano, salt, and pepper. Adjust seasonings to taste.
- Gently place the cod fillets into the sauce, ensuring they are well coated. Cook for 5-6 minutes, until the cod flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
For a bright finish, add a spritz of lemon juice at the end. Consider experimenting with different herbs for personalization.
