Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups roasted red peppers (or fresh red bell peppers)
  • 1 cup vegetable broth (or chicken broth)
  • 1 teaspoon smoked paprika (or regular paprika if necessary)
  • 1 teaspoon dried oregano (or fresh oregano for a more vibrant flavor)
  • Salt and pepper to taste
  • 4 fillets of cod (or tilapia or haddock as substitutes)
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for one more minute, allowing the flavors to meld.
  3. Add the roasted red peppers and vegetable broth to the skillet. Blend well and let it simmer for about 5 minutes.
