Ingredients
- 1 lb white fish fillets (such as cod or tilapia)
- 1 can (14 oz) coconut milk
- 4 cups fish or chicken broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 thumb-sized piece of ginger, minced
- 1 lime, juiced
- 1-2 green chilies, chopped (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger; sauté until softened.
- Add the fish or chicken broth and bring to a simmer.
- Stir in the coconut milk and lime juice, and season with salt, pepper, and green chilies if using.
- Add the fish fillets and cook until they are opaque and flaky, about 5-7 minutes.
