Description

A vibrant and aromatic soup featuring creamy coconut milk and tender fish, perfect for a comforting meal.

Ingredients

  • 1 lb white fish fillets (such as cod or tilapia)
  • 1 can (14 oz) coconut milk
  • 4 cups fish or chicken broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 thumb-sized piece of ginger, minced
  • 1 lime, juiced
  • 1-2 green chilies, chopped (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger; sauté until softened.
  2. Add the fish or chicken broth and bring to a simmer.
  3. Stir in the coconut milk and lime juice, and season with salt, pepper, and green chilies if using.
  4. Add the fish fillets and cook until they are opaque and flaky, about 5-7 minutes.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For a creamier soup, increase the coconut milk and decrease the broth slightly. Use fresh, good-quality fish for the best flavor.
