Description

A heartwarming coconut fish curry with tender white fish and fragrant spices, perfect for any gathering.


Ingredients

  • 1 lb white fish (cod or tilapia)
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste


Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the onions and sauté until translucent, about 5 minutes.
  3. Add the garlic and ginger, cooking for another minute until fragrant.
  4. Stir in the red curry paste and cook for 1-2 minutes.
  5. Pour in the coconut milk, fish sauce, and lime juice, stirring well.
  6. Bring the mixture to a gentle simmer.
  7. Add the fish and cook for 5-10 minutes, or until it is cooked through and flakes easily with a fork.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro.
