Description

A delightful Coconut Fish Curry that combines creamy coconut milk with tender fish fillets and aromatic spices for a comforting dish.


Ingredients

  • 1 lb white fish fillets (such as cod or tilapia)
  • 1 can (13.5 oz) coconut milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon fish sauce
  • 2 cups spinach
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Fresh cilantro for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and sauté until translucent.
  3. Stir in garlic and ginger; cook for another minute.
  4. Add curry powder and turmeric; stir well.
  5. Pour in coconut milk and fish sauce, and bring to a simmer.
  6. Add fish fillets and simmer for 5-7 minutes until cooked through.
  7. Stir in spinach and cook until wilted.
  8. Season with salt, pepper, and lime juice.
  9. Serve hot, garnished with fresh cilantro.
