A delightful Coconut Fish Curry that combines creamy coconut milk with tender fish fillets and aromatic spices for a comforting dish.
Ingredients
- 1 lb white fish fillets (such as cod or tilapia)
- 1 can (13.5 oz) coconut milk
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 tablespoon fish sauce
- 2 cups spinach
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add onion and sauté until translucent.
- Stir in garlic and ginger; cook for another minute.
- Add curry powder and turmeric; stir well.
- Pour in coconut milk and fish sauce, and bring to a simmer.
- Add fish fillets and simmer for 5-7 minutes until cooked through.
- Stir in spinach and cook until wilted.
- Season with salt, pepper, and lime juice.
- Serve hot, garnished with fresh cilantro.
