Description

A tropical flavor adventure featuring salmon fillets cooked in a rich coconut milk and curry sauce, paired with vibrant vegetables.


Ingredients

  • 2 Salmon fillets
  • 1 can Coconut milk
  • 2 tbsp Curry powder
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 1 inch Ginger, minced
  • 1 Bell pepper, sliced
  • 2 tbsp Oil (for pan-searing)
  • Salt, to taste
  • Pepper, to taste
  • Rice (for serving)
  • Vegetables (for serving)


Instructions

  1. Heat the oil in a pan over medium heat.
  2. Season the salmon fillets with salt and pepper, then pan-sear them until golden and cooked through. Remove and set aside.
  3. In the same pan, add the chopped onions, garlic, and ginger. Sauté until fragrant.
  4. Add the curry powder and stir for a minute.
  5. Pour in the coconut milk and bring to a simmer.
  6. Incorporate the bell peppers and any desired vegetables. Cook until softened.
  7. Return the salmon to the pan and coat with the curry sauce.
  8. Serve with rice and extra veggies on the side.
