Ingredients
- 1 can (14 oz) full-fat coconut milk
- 1 tablespoon olive oil
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon chili powder (optional for heat)
- 2 garlic cloves, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
- 4 cod fillets (about 6 oz each)
- Fresh cilantro or parsley, chopped, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together the coconut milk, olive oil, curry powder, turmeric, ginger, chili powder, garlic, lime juice, and a generous pinch of salt and pepper.
- Place the cod fillets in a baking dish and pour the coconut curry sauce over the cod, ensuring each fillet is well-coated.
- Bake for 20-25 minutes or until the cod flakes easily with a fork.
- Garnish with fresh cilantro or parsley and serve with lime wedges.
Notes
Adjust seasoning to taste. For extra heat, add more chili powder. Store leftovers in an airtight container for up to three days.
