Ingredients
- 1 can (14 oz) full-fat coconut milk
- 1 tablespoon olive oil
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon chili powder (optional, for heat)
- 2 garlic cloves, minced
- 1 tablespoon lime juice
- Salt and pepper, to taste
- 1 tablespoon honey (optional, for sweetness)
- 4 cod fillets (about 6 oz each)
- Fresh cilantro or parsley, chopped, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together the coconut milk, olive oil, curry powder, turmeric, ginger, garlic, lime juice, salt, and pepper. Stir in honey if using.
- Rinse the cod fillets under cold water and pat them dry.
- Season both sides of the cod fillets with salt and pepper.
- Place the seasoned cod fillets in a baking dish and pour the coconut curry sauce evenly over them.
- Bake in the preheated oven for 20-25 minutes, or until the cod is opaque and flakes easily with a fork.
- Remove from the oven, garnish with fresh cilantro or parsley, and serve with lime wedges.
