Description

A delightful dish that combines crispy coconut crusted fish with a vibrant mango salsa, perfect for weeknight meals or special occasions.


Ingredients

  • 4 fillets fish (tilapia or cod)
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour


Instructions

  1. In a shallow dish, combine shredded coconut, breadcrumbs, salt, black pepper, garlic powder, and paprika.
  2. Place the beaten eggs in another shallow dish.
  3. Add the all-purpose flour to a third dish.
  4. Dredge each fish fillet in flour, dip in eggs, and then press into the coconut mixture. Repeat for all fillets.
  5. Heat oil in a large skillet over medium heat.
  6. Carefully add the coated fish fillets to the skillet, cooking for 4-5 minutes on each side until golden brown.
  7. Remove the fillets from the skillet and drain on paper towels.

Notes

For a healthier twist, try baking the fish for about 15-20 minutes at 400°F instead of frying. Serve with mango salsa and garnish with chopped cilantro.
