Ingredients
- 1 lb shrimp (450 g)
- 1 lb crab meat (450 g)
- 2 tablespoons olive oil (30 ml)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- 4 cups fish or vegetable stock (950 ml)
- 1 cup coconut cream (240 ml)
- 2 cups diced tomatoes (480 ml)
- 2 teaspoons (10 ml) paprika
- 1 teaspoon (5 ml) ground cumin
- Salt to taste
- Black pepper to taste
- 2 tablespoons lemon juice (30 ml)
- 1 tablespoon (15 ml) fresh parsley, chopped
- 1 tablespoon (15 ml) fresh thyme, chopped
- 1 tablespoon (15 ml) fresh chives, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add chopped carrots and celery to the pot and cook for 5 minutes.
- Pour in the seafood stock and bring to a simmer.
- Stir in the diced tomatoes, paprika, and cayenne pepper.
- Season with salt and black pepper to taste.
- Let the mixture simmer for 20 minutes.
- Add shrimp and crab meat to the pot.
- Cook until shrimp are pink and cooked through, about 5 minutes.
- Stir in the heavy cream and lemon juice.
- Simmer for an additional 5 minutes, stirring occasionally.
- Remove the pot from heat and stir in fresh parsley, thyme, and chives.
- Adjust seasoning with more salt and pepper if needed.
- Serve the bisque hot, garnished with extra fresh herbs if desired.
