Ingredients

  • 1 lb shrimp (450 g)
  • 1 lb crab meat (450 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 4 cups fish or vegetable stock (950 ml)
  • 1 cup coconut cream (240 ml)
  • 2 cups diced tomatoes (480 ml)
  • 2 teaspoons (10 ml) paprika
  • 1 teaspoon (5 ml) ground cumin
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons lemon juice (30 ml)
  • 1 tablespoon (15 ml) fresh parsley, chopped
  • 1 tablespoon (15 ml) fresh thyme, chopped
  • 1 tablespoon (15 ml) fresh chives, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add chopped carrots and celery to the pot and cook for 5 minutes.
  5. Pour in the seafood stock and bring to a simmer.
  6. Stir in the diced tomatoes, paprika, and cayenne pepper.
  7. Season with salt and black pepper to taste.
  8. Let the mixture simmer for 20 minutes.
  9. Add shrimp and crab meat to the pot.
  10. Cook until shrimp are pink and cooked through, about 5 minutes.
  11. Stir in the heavy cream and lemon juice.
  12. Simmer for an additional 5 minutes, stirring occasionally.
  13. Remove the pot from heat and stir in fresh parsley, thyme, and chives.
  14. Adjust seasoning with more salt and pepper if needed.
  15. Serve the bisque hot, garnished with extra fresh herbs if desired.
