Ingredients
- 2 cups cubed potatoes (480 ml)
- 1 cup diced carrots (240 ml)
- 1 cup diced celery (240 ml)
- 1 cup minced onion (240 ml)
- 3 (185 g) cans minced beef, drained with juice reserved
- water to cover
- 75 cup (180 ml) vegetable oil
- 75 cup (180 ml) all-purpose flour
- 1 quart (950 ml) milk
- 2 tablespoons (30 ml) apple cider vinegar
- 5 teaspoons (8 ml) salt
- ground black pepper to taste
Instructions
- Place the cubed potatoes, diced carrots, diced celery, and minced onion into a large frying pan. Pour in the reserved beef juice and add additional water until the vegetables are submerged. Cook on medium-low heat, stirring occasionally, until the vegetables become soft.
- While the vegetables are cooking, heat the vegetable oil in a large, sturdy saucepan over medium heat. Gradually whisk in the flour until you achieve a smooth consistency. Slowly incorporate the milk, stirring continuously, until the mixture becomes thick and smooth.
- Combine the cooked vegetable mixture with any remaining juices into the saucepan and heat gently until warmed through.
- Add the minced beef just before serving to prevent it from becoming tough. Once the beef is warmed, mix in the apple cider vinegar and adjust the seasoning with salt and ground black pepper to your preference.
Notes
- Consider using beef broth for a richer flavor when cooking the vegetables.
- Gradually whisk in the flour to ensure a smooth white sauce.
- Adjust the soup’s thickness by adding more milk as needed.
