Description

Vibrant cilantro lime shrimp tacos paired with a creamy slaw for a fresh, zesty experience reminiscent of summer.


Ingredients

  • 1 lb wild-caught shrimp, peeled and deveined
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon lime zest (from 1 lime)
  • 2 tablespoons lime juice (from that same lime)
  • 2 tablespoons honey
  • ½ bunch cilantro, finely chopped
  • 3 cups finely shredded green cabbage
  • ½ cup Greek yogurt
  • 2 tablespoons lime juice (from 1 whole lime)
  • Avocado, sliced
  • 8 6-inch tortillas (corn or flour)
  • Extra lime wedges, for serving


Instructions

  1. Mix salt, black pepper, smoked paprika, garlic powder, and chili powder in a bowl.
  2. Drizzle olive oil over thawed shrimp and toss to coat.
  3. Sprinkle the spice mixture over the shrimp and mix until evenly coated.
  4. Heat skillet over medium-high and melt butter.
  5. Add seasoned shrimp to the skillet, cooking for 2-3 minutes on each side until pink and opaque.
  6. Remove from heat and stir in lime zest and lime juice.
  7. In a separate bowl, mix cabbage, cilantro, Greek yogurt, lime juice, and honey until combined.
  8. Warm tortillas in a dry skillet or microwave.
  9. Assemble tacos with creamy slaw, shrimp, and avocado slices.
  10. Serve with extra lime wedges.

Notes

Ensure that shrimp are cooked just until pink to avoid rubbery texture. Consider marinating the shrimp for more flavor.
