Ingredients
- 1 lb wild-caught shrimp, peeled and deveined
- 3 cups finely shredded green cabbage
- ½ cup Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Fresh cilantro, chopped
- Tortillas (corn or flour)
- Avocado slices
Instructions
- In a bowl, mix salt, pepper, smoked paprika, garlic powder, chili powder, olive oil, lime zest, lime juice, honey, and chopped cilantro to create a marinade.
- Add the shrimp to the marinade and let it sit for 10 minutes.
- In another bowl, combine shredded cabbage with Greek yogurt, lime juice, and chopped cilantro to make the slaw.
- Heat butter in a skillet over medium-high heat; cook marinated shrimp for about 2-3 minutes per side until pink and opaque.
- Warm tortillas; assemble by placing shrimp on each tortilla topped with slaw and avocado slices.
- Serve immediately with extra lime wedges.
