Ingredients
- 1 pound (454 g) mussels (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) apple cider (240 milliliters)
- 1 cup (240 ml) vegetable broth (240 milliliters)
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon (15 ml) fresh parsley, chopped
- 1 tablespoon (15 ml) fresh thyme, chopped
- 1 tablespoon (15 ml) fresh basil, chopped
- 1 tablespoon (15 ml) vegetable oil
Instructions
- Rinse and scrub the mussels under cold water.
- Discard any mussels that are open and do not close when tapped.
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and cook until soft, about 3-4 minutes.
- Stir in the minced garlic and cook for 1 minute.
- Pour in the apple cider and vegetable broth.
- Bring the liquid to a simmer.
- Add the mussels to the pot.
- Cover the pot and cook for 5-7 minutes until mussels open.
- Discard any mussels that remain closed.
- Stir in the lemon juice, salt, and pepper.
- Add the chopped parsley, thyme, and basil.
- Stir in the butter until melted and well combined.
- Serve the mussels with the cooking liquid.
