Ingredients

  • 1 pound (454 g) mussels (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (240 ml) apple cider (240 milliliters)
  • 1 cup (240 ml) vegetable broth (240 milliliters)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon (15 ml) fresh parsley, chopped
  • 1 tablespoon (15 ml) fresh thyme, chopped
  • 1 tablespoon (15 ml) fresh basil, chopped
  • 1 tablespoon (15 ml) vegetable oil


Instructions

  1. Rinse and scrub the mussels under cold water.
  2. Discard any mussels that are open and do not close when tapped.
  3. In a large pot, heat olive oil over medium heat.
  4. Add the chopped onion and cook until soft, about 3-4 minutes.
  5. Stir in the minced garlic and cook for 1 minute.
  6. Pour in the apple cider and vegetable broth.
  7. Bring the liquid to a simmer.
  8. Add the mussels to the pot.
  9. Cover the pot and cook for 5-7 minutes until mussels open.
  10. Discard any mussels that remain closed.
  11. Stir in the lemon juice, salt, and pepper.
  12. Add the chopped parsley, thyme, and basil.
  13. Stir in the butter until melted and well combined.
  14. Serve the mussels with the cooking liquid.
