Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) chipotle peppers in adobo sauce, chopped
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • 1 teaspoon (5 ml) ground cumin (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup (240 ml) long-grain white rice (200 grams)
  • 2 cups water (480 ml)
  • 1 tablespoon lime juice (15 ml)
  • 1 cup (240 ml) corn kernels, cooked (150 grams)
  • 1 cup (240 ml) chickpeas, drained and rinsed (170 grams)
  • 1 avocado, sliced
  • 1/4 cup (60 ml) fresh cilantro, chopped (10 grams)
  • 1 lime, cut into wedges


Instructions

  1. In a medium bowl, combine shrimp, chipotle peppers, olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, and black pepper. Mix well to coat shrimp evenly.
  2. Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp in a single layer.
  3. Cook shrimp for 2-3 minutes on each side until opaque and cooked through. Remove from heat and set aside.
  4. In a medium saucepan, combine rice and water. Bring to a boil over high heat.
  5. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and water is absorbed.
  6. Remove saucepan from heat and let rice sit covered for 5 minutes, then fluff with a fork.
  7. Stir lime juice into the cooked rice.
  8. Divide the rice evenly into serving bowls.
  9. Top each bowl with cooked shrimp, corn, and black beans.
  10. Add sliced avocado on top of each bowl.
  11. Garnish with fresh cilantro.
  12. Serve with lime wedges on the side for squeezing over the bowls.
