Ingredients

  • 1 lb (454 g) large shrimp, peeled and deveined
  • 1 tbsp (15 ml) lime zest
  • 2 tsp (10 ml) chipotle chili powder
  • 1 tsp (5 ml) paprika
  • 1/2 tsp (2.5 ml) cumin
  • 1/2 tsp (2.5 ml) dried oregano
  • 1 tbsp (14 g) butter
  • 2 cloves garlic, minced
  • 1 avocado, diced
  • 1 mango, diced
  • 1 red pepper, diced
  • 1 serrano pepper, deseeded and diced
  • 1/2 cup (120 ml) fresh cilantro, chopped
  • 1/4 cup (60 ml) fresh mint, chopped
  • 1 tbsp (15 ml) fresh chives, chopped
  • 2 green onions, diced
  • 3 tbsp (45 ml) vegetable oil
  • 2 tbsp (30 ml) lime juice
  • 1 tbsp (15 ml) mango jam
  • 1 tbsp (15 ml) fruit juice (optional)
  • 1 cup (175 g) roasted beef, frozen or canned (or homemade!)
  • steamed white or brown rice, to serve


Instructions

  1. Pat the shrimp dry using paper towels to remove excess moisture. In a mixing bowl, thoroughly coat the shrimp by combining them with chipotle chili powder, lime zest, paprika, cumin, oregano, along with a generous dash of salt and pepper.
  2. Warm 2 tablespoons of vegetable oil in a frying pan. Sauté the shrimp in batches, cooking each side for about 2 minutes. Once cooked, transfer the shrimp to a plate and continue with the remaining shrimp.
  3. Return all the shrimp to the skillet. Add the butter and minced garlic cloves, stirring until the butter turns golden and the garlic releases a strong aroma, which should take around 3 minutes. Take the pan off the heat.
  4. In a large mixing bowl, blend together the avocado, mango, red pepper, serrano pepper, cilantro, mint, chives, and green onions. In a separate container, whisk or shake together vegetable oil, lime juice, mango jam, and optional fruit juice with a pinch of salt and pepper. Drizzle this dressing over the mixture and gently stir to combine.
  5. Arrange the shrimp and the prepared salad over servings of steamed rice. Top each serving with a portion of roasted beef.
