Ingredients

  • 2 tablespoons vegetable oil (30 ml)
  • 10 cloves garlic, chopped
  • 1 teaspoon minced fresh ginger root (5 g)
  • 1 (8 ounce) can sliced water chestnuts, drained (227 g)
  • 1 cup snow peas (150 g)
  • 1 cup small white button mushrooms (100 g)
  • 1 teaspoon (5 ml) crushed red pepper flakes
  • 1/2 teaspoon (3 ml) salt
  • 1 teaspoon (5 ml) ground black pepper
  • 1 pound peeled and deveined jumbo shrimp (450 g)
  • 1/2 cup beef broth (120 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 2 tablespoons (30 ml) soy sauce
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 tablespoon cornstarch (8 g)
  • 1 tablespoon (15 ml) water


Instructions

  1. Warm the vegetable oil in a wok or a large pan until it is extremely hot. Sauté the chopped garlic and minced ginger in the hot oil until their aroma is released, which takes roughly half a minute.
  2. Introduce the sliced water chestnuts, snow peas, small white button mushrooms, crushed red pepper flakes, salt, ground black pepper, and peeled shrimp to the pan. Stir and cook until the shrimp becomes pink, which should take about 2 to 3 minutes.
  3. In a small bowl, mix together the beef broth, rice vinegar, soy sauce, and apple cider vinegar. Pour this mixture into the pan with the shrimp. Stir briefly to ensure everything is well combined.
  4. Mix the cornstarch with water in a separate container and add this mixture to the wok. Stir continuously until the sauce reaches the desired thickness, which should take approximately 2 minutes.
