Ingredients

  • 1 pound (454 g) squid, cleaned and cut into rings (450 grams)
  • 1 cup (240 ml) all-purpose flour (125 grams)
  • 1/4 cup (60 ml) cornstarch (30 grams)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1 teaspoon (5 ml) ground white pepper (2 grams)
  • 1/2 teaspoon (3 ml) ground black pepper (1 gram)
  • 1/2 teaspoon (3 ml) garlic powder (1 gram)
  • 1/2 teaspoon (3 ml) onion powder (1 gram)
  • 1/2 teaspoon (3 ml) crushed red pepper flakes (1 gram)
  • Vegetable oil for frying
  • 2 green onions, finely sliced
  • 1 red chili, thinly sliced
  • 2 cloves garlic, minced


Instructions

  1. Pat the squid rings dry with paper towels.
  2. In a bowl, combine flour, cornstarch, salt, white pepper, black pepper, garlic powder, onion powder, and red pepper flakes.
  3. Heat vegetable oil in a deep pan or wok over medium-high heat.
  4. Dredge the squid rings in the flour mixture, coating thoroughly.
  5. Shake off excess flour from the squid rings.
  6. Fry the squid in batches until golden brown and crispy, about 2-3 minutes per batch.
  7. Remove the squid with a slotted spoon and drain on paper towels.
  8. In a separate pan, heat a small amount of oil over medium heat.
  9. Add the minced garlic and sauté until fragrant, about 30 seconds.
  10. Add the green onions and red chili to the pan, stirring briefly.
  11. Toss the fried squid with the sautéed garlic, green onions, and chili.
  12. Serve immediately, garnished with extra green onions if desired.
