Ingredients
- 1 pound (454 g) squid, cleaned and cut into rings (450 grams)
- 1 cup (240 ml) all-purpose flour (125 grams)
- 1/4 cup (60 ml) cornstarch (30 grams)
- 1 teaspoon (5 ml) salt (5 grams)
- 1 teaspoon (5 ml) ground white pepper (2 grams)
- 1/2 teaspoon (3 ml) ground black pepper (1 gram)
- 1/2 teaspoon (3 ml) garlic powder (1 gram)
- 1/2 teaspoon (3 ml) onion powder (1 gram)
- 1/2 teaspoon (3 ml) crushed red pepper flakes (1 gram)
- Vegetable oil for frying
- 2 green onions, finely sliced
- 1 red chili, thinly sliced
- 2 cloves garlic, minced
Instructions
- Pat the squid rings dry with paper towels.
- In a bowl, combine flour, cornstarch, salt, white pepper, black pepper, garlic powder, onion powder, and red pepper flakes.
- Heat vegetable oil in a deep pan or wok over medium-high heat.
- Dredge the squid rings in the flour mixture, coating thoroughly.
- Shake off excess flour from the squid rings.
- Fry the squid in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove the squid with a slotted spoon and drain on paper towels.
- In a separate pan, heat a small amount of oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Add the green onions and red chili to the pan, stirring briefly.
- Toss the fried squid with the sautéed garlic, green onions, and chili.
- Serve immediately, garnished with extra green onions if desired.
