Ingredients

  • 1 pound (454 g) large prawns, peeled and deveined (450 grams)
  • 1/2 cup (120 ml) cornstarch (60 grams)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1 teaspoon (5 ml) ground white pepper (2 grams)
  • 1 teaspoon (5 ml) ground black pepper (2 grams)
  • 1 teaspoon (5 ml) garlic powder (3 grams)
  • 1 teaspoon (5 ml) onion powder (3 grams)
  • 1/2 teaspoon (3 ml) Chinese five spice powder (1 gram)
  • Vegetable oil for frying
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 red chili, sliced
  • 1 green chili, sliced


Instructions

  1. Rinse the prawns under cold water and pat them dry with paper towels.
  2. In a bowl, combine cornstarch, salt, white pepper, black pepper, garlic powder, onion powder, and Chinese five spice powder.
  3. Toss the prawns in the spiced cornstarch mixture until they are well coated.
  4. Heat vegetable oil in a deep pan over medium-high heat.
  5. Once the oil is hot, fry the prawns in batches until golden and crispy, about 2-3 minutes per side.
  6. Remove the prawns from the oil and drain them on paper towels.
  7. In a separate pan, heat a small amount of oil over medium heat.
  8. Add the minced garlic and sauté until fragrant, about 30 seconds.
  9. Add the sliced green onions, red chili, and green chili to the pan, and stir-fry for 1 minute.
  10. Add the fried prawns to the pan and toss to combine with the aromatics.
  11. Serve immediately, garnished with extra sliced green onions if desired.
