Description

A delectable dish of crispy fried shrimp coated in shredded coconut and panko breadcrumbs, served with a sweet and tangy dipping sauce.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 cup sweetened condensed milk
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying


Instructions

  1. In a bowl, mix together the sweetened condensed milk, mayonnaise, lime juice, salt, and pepper to create the dipping sauce. Set aside.
  2. In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, mix the shredded coconut and panko breadcrumbs.
  3. Dip each shrimp first in the flour, then into the beaten eggs, and finally into the coconut-panko mixture, ensuring they are well coated.
  4. Heat oil in a deep frying pan over medium heat.
  5. Fry the shrimp in batches until golden brown, about 2-3 minutes on each side.
  6. Drain on paper towels and serve warm with the dipping sauce.

Notes

Make sure the oil temperature is around 350°F for the best frying results. For added flavor, consider spices like garlic powder or paprika in the flour.
