Description

A delightful dish featuring crunchy, golden-brown coconut shrimp that encapsulates the essence of coastal gatherings with a perfect balance of sweet and savory.


Ingredients

  • 1 pound of peeled and deveined shrimp
  • 1 cup of shredded coconut
  • 1 cup of breadcrumbs
  • 1/2 cup of flour
  • 2 eggs
  • 1/4 cup of sweetened condensed milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Oil for frying


Instructions

  1. Combine flour, salt, and pepper in a bowl.
  2. Whisk eggs and mix in sweetened condensed milk in another bowl.
  3. Mix shredded coconut and breadcrumbs in a third bowl.
  4. Dip each shrimp in the flour mixture, then in the egg mixture, and finally coat with the coconut-breadcrumb mixture.
  5. Heat oil in a deep pan over medium heat.
  6. Fry shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
  7. Drain on paper towels and serve immediately.
