Ingredients

  • 454 g raw shrimp, peeled & deveined
  • 5 ml salt
  • 5 g cornstarch
  • 15 g all-purpose flour
  • 60 ml chili garlic sauce
  • 30 g brown sugar
  • 10 ml light soy sauce (or soy sauce)
  • 5 ml vegetable oil
  • 15 g minced ginger


Instructions

  1. Place the shrimp into a medium bowl and pour over the Shaoxing . Sprinkle the salt evenly over the shrimp. Stir until the salt is well mixed in. Set this aside while you prepare the other components.
  2. Mix together the ingredients for the sauce in a separate bowl, ensuring the brown sugar dissolves completely. Set this aside.
  3. Pour 4 tablespoons of oil into a medium skillet, ensuring the bottom is fully covered, and heat until hot. While the oil is heating, add cornstarch and all-purpose flour to the shrimp bowl. Toss the shrimp until they are entirely covered with the mixture.
  4. Remove any excess flour from the shrimp and place them in the hot pan. You may need to cook them in two rounds. Allow the shrimp to cook undisturbed until the underside becomes golden, about 2 to 3 minutes. Then turn them over to brown the other side for another 2 to 3 minutes. Once cooked, move the shrimp to a large plate in a single layer, and continue cooking the rest.
  5. When all the shrimp are cooked, turn off the heat and use paper towels to clean out any leftovers from the pan.
  6. Pour the remaining 1/2 tablespoon of oil into the pan and heat it on medium. Add the ginger and stir until it releases its aroma, about 1 minute.
  7. Pour the sauce mixture into the pan. Cook and stir until the sauce thickens and shines, which will take about 20 to 30 seconds.
  8. Switch off the heat and put the shrimp back into the pan, tossing them to ensure they are well coated with the sauce. Serve immediately as a main dish.

  • Make sure to thoroughly dry the shrimp before coating them with the cornstarch and flour mixture to achieve a crispy texture.
