Ingredients

  • – 12 oz (350g) shrimp, shell-on, headless
  • – 1 teaspoon (5 ml) black peppercorn
  • – 3 tablespoons (45 ml) vegetable oil
  • – 2 cloves garlic, minced
  • – 1/2 tablespoon (8 ml) vegetarian oyster sauce
  • – 1 tablespoon (15 ml) apple juice
  • – 1 teaspoon (5 ml) sugar
  • – 1 pinch salt
  • – 1 tablespoon (15 ml) scallion, chopped


Instructions

  1. Take the shells off the shrimp, but keep the tails on. Gently crush the black peppercorns using a mortar and pestle until they are roughly ground. Alternatively, use the side of a knife to press, break, and chop the peppercorns coarsely. Warm a pan or wok and pour in the vegetable oil over medium heat. Cook the minced garlic and cracked black pepper until they release their aroma, then introduce the shrimp and stir to combine everything. Pour in the vegetarian oyster sauce and mix a few times before adding the apple juice and sugar. Stir-fry until the shrimp are fully cooked. Sprinkle in the chopped scallion, mix thoroughly, then transfer to a serving dish and enjoy immediately.
