Description

Delicious shrimp sautéed in a vibrant chimichurri sauce, perfect for a quick and flavorful dinner.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Cooked rice or vegetables for serving


Instructions

  1. In a bowl, combine chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper. Stir well to create chimichurri sauce. Allow to sit for a few minutes.
  2. Heat a skillet over medium heat and add the shrimp. Cook for 2-3 minutes on each side until pink and cooked through.
  3. Pour chimichurri sauce over the shrimp and toss to coat.
  4. Serve shrimp over cooked rice or alongside fresh vegetables.

Notes

For best results, do not overcook the shrimp. Fresh herbs greatly enhance the flavor of the chimichurri.
