Delicious shrimp sautéed in a vibrant chimichurri sauce, perfect for a quick and flavorful dinner.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Cooked rice or vegetables for serving
Instructions
- In a bowl, combine chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper. Stir well to create chimichurri sauce. Allow to sit for a few minutes.
- Heat a skillet over medium heat and add the shrimp. Cook for 2-3 minutes on each side until pink and cooked through.
- Pour chimichurri sauce over the shrimp and toss to coat.
- Serve shrimp over cooked rice or alongside fresh vegetables.
Notes
For best results, do not overcook the shrimp. Fresh herbs greatly enhance the flavor of the chimichurri.
