Description

A simple yet flavorful dish combining fresh salmon, peppery rocket, and spicy chilli oil, perfect for weeknight dinners or impressing guests.


Ingredients

  • 200g pasta of choice
  • 150g sustainable salmon
  • 2 tablespoons chilli oil
  • 100g fresh rocket
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese (optional) for serving


Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water.
  2. While the pasta is cooking, heat the chilli oil in a pan over medium heat.
  3. Add the sustainable salmon to the pan and cook for about 3-4 minutes on each side until it’s just cooked through.
  4. Drain the pasta and add it to the pan with the salmon and chilli oil, tossing to combine.
  5. Gently fold in the fresh rocket until wilted.
  6. Season with salt and black pepper to taste.
  7. Serve warm with grated Parmesan cheese if desired.

Notes

For added texture, consider tossing in toasted nuts or seeds. A squeeze of lemon at the end brightens the flavors.
