A simple yet flavorful dish combining fresh salmon, peppery rocket, and spicy chilli oil, perfect for weeknight dinners or impressing guests.
Ingredients
- 200g pasta of choice
- 150g sustainable salmon
- 2 tablespoons chilli oil
- 100g fresh rocket
- Salt to taste
- Black pepper to taste
- Parmesan cheese (optional) for serving
Instructions
- Cook the pasta according to package instructions in a large pot of salted boiling water.
- While the pasta is cooking, heat the chilli oil in a pan over medium heat.
- Add the sustainable salmon to the pan and cook for about 3-4 minutes on each side until it’s just cooked through.
- Drain the pasta and add it to the pan with the salmon and chilli oil, tossing to combine.
- Gently fold in the fresh rocket until wilted.
- Season with salt and black pepper to taste.
- Serve warm with grated Parmesan cheese if desired.
Notes
For added texture, consider tossing in toasted nuts or seeds. A squeeze of lemon at the end brightens the flavors.
