Description

Ingredients

  • 1 1/2 pounds Chilean sea bass (4 filets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 garlic clove, minced
  • 1 tablespoon finely chopped fresh thyme or parsley, plus more for serving
  • 1 tablespoon lemon juice
  • Lemon wedges, for serving


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Pat the Chilean sea bass filets dry with paper towels.
  3. Mix together the garlic powder, paprika, kosher salt, and black pepper in a small bowl.
  4. Season both sides of each filet with the spice blend.
  5. Add the olive oil to the hot skillet and swirl to coat the bottom.
  6. Place the sea bass filets in the pan and sear undisturbed for 4 to 5 minutes.
  7. Flip the filets, add the salted butter, minced garlic, and chopped herbs to the pan.
  8. Baste the fish with the melted butter for another 2 to 3 minutes.
  9. Drizzle lemon juice over the filets and let rest for 1 to 2 minutes.
  10. Garnish with additional herbs and serve with lemon wedges.

Notes

Serve with roasted vegetables, quinoa, or a light salad. Store leftovers in an airtight container for up to two days.
