A comforting chicken soup filled with vibrant vegetables, perfect for bringing family and friends together.
Ingredients
- 4 pieces of chicken
- 2 carrots
- 1 chayote
- 1 potato
- 2 squashes
- 1 celery stalk
- 2 liters of water
- ½ onion
- 1 sprig of hierbabuena
- Salt (to taste)
- Pepper (to taste)
Instructions
- Rinse the chicken thoroughly and remove the skin, ensuring a clear broth.
- Peel the carrots, chayote, and potato, then cut them into medium cubes.
- Slice the squash and celery into half-moons.
- In a pot, add the chicken, pour in the water, and include the onion, hierbabuena, salt, and pepper.
- Cook the chicken over medium heat for 25 minutes.
- After 25 minutes, add the potato to the chicken broth and let it cook for an additional 5 minutes.
- Bring in the carrots and chayote, allowing them to simmer together for another 5 minutes.
- Finally, add the squash and continue to cook until both the chicken and vegetables are tender. Adjust the seasoning as needed.
Notes
Consider adding garlic for more flavor and adjust vegetables based on seasonal availability.
