Ingredients

  • 1 cup quick-cooking grits (240 ml)
  • 4 cups water (960 ml)
  • 1 teaspoon salt (5 g)
  • 1 tablespoon unsalted butter (15 g)
  • 1 cup shredded cheddar cheese (120 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 pound medium shrimp, peeled and deveined (450 g)
  • 1 teaspoon garlic powder (2 g)
  • 1 teaspoon paprika (2 g)
  • 1/4 teaspoon cayenne pepper (1 g)
  • 1/4 teaspoon black pepper (1 g)
  • 1/2 cup chopped green onions (50 g)
  • 1/2 cup diced bell peppers (75 g)
  • 1 cup chicken broth (240 ml)
  • 1/4 cup heavy cream (60 ml)


Instructions

  1. In a medium saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil.
  2. Gradually whisk in 1 cup of quick-cooking grits.
  3. Reduce heat to low and simmer, stirring occasionally, for 5 minutes or until thickened.
  4. Stir in 1 tablespoon of unsalted butter and 1 cup of shredded cheddar cheese until melted.
  5. Remove grits from heat and set aside.
  6. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  7. Add 1 pound of shrimp to the skillet.
  8. Season shrimp with 1 teaspoon garlic powder, 1 teaspoon paprika, 1/4 teaspoon cayenne pepper, and 1/4 teaspoon black pepper.
  9. Cook shrimp for 3-4 minutes, turning once, until pink and opaque.
  10. Remove shrimp from skillet and set aside.
  11. In the same skillet, add 1/2 cup chopped green onions and 1/2 cup diced bell peppers.
  12. Sauté vegetables for 3 minutes until softened.
  13. Pour in 1 cup of chicken broth and bring to a simmer.
  14. Stir in 1/4 cup of heavy cream and simmer for 2 minutes.
  15. Return shrimp to the skillet and stir to combine with the sauce.
  16. Add cooked grits to the skillet, stirring gently to incorporate.
  17. Cook for an additional 2 minutes until heated through.
  18. Serve immediately, garnished with additional cheese or green onions if desired.
