Ingredients
- 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
- 8 ounce (227 g) s crab meat, cooked (225 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) ground cumin (5 grams)
- 1 teaspoon (5 ml) smoked paprika (5 grams)
- Salt, to taste
- Black pepper, to taste
- 8 ounce (227 g) s shredded cheddar cheese (225 grams)
- 8 flour tortillas
- 1/4 cup (60 ml) sour cream (60 milliliters)
- 2 tablespoon (30 ml) s chopped fresh cilantro (30 milliliters)
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and green bell pepper to the skillet.
- Sauté the vegetables until they start to soften, about 5 minutes.
- Stir in the minced garlic, cooking for an additional 1 minute.
- Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Stir in the crab meat, mixing well to combine with the shrimp and vegetables.
- Sprinkle the mixture with ground cumin, smoked paprika, salt, and black pepper.
- Cook for another 2-3 minutes, ensuring all ingredients are well coated with spices.
- Remove the skillet from heat and set aside.
- Preheat a separate skillet over medium heat.
- Place one flour tortilla in the skillet and sprinkle with 1 ounce (28 grams) of shredded cheddar cheese.
- Add a portion of the shrimp and crab mixture on top of the cheese.
- Top with an additional ounce (28 grams) of cheese.
- Fold the tortilla in half, pressing down gently.
- Cook for 2-3 minutes on each side, until the tortilla is golden and cheese is melted.
- Repeat the process with remaining tortillas and filling.
- Cut each fajita roll into halves or thirds.
- Serve with a dollop of sour cream and a sprinkle of chopped cilantro.
- Garnish with lime wedges on the side for squeezing over the rolls.
