Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 8 ounce (227 g) s crab meat, cooked (225 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ground cumin (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 8 ounce (227 g) s shredded cheddar cheese (225 grams)
  • 8 flour tortillas
  • 1/4 cup (60 ml) sour cream (60 milliliters)
  • 2 tablespoon (30 ml) s chopped fresh cilantro (30 milliliters)
  • 1 lime, cut into wedges


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the onion, red bell pepper, and green bell pepper to the skillet.
  3. Sauté the vegetables until they start to soften, about 5 minutes.
  4. Stir in the minced garlic, cooking for an additional 1 minute.
  5. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  6. Stir in the crab meat, mixing well to combine with the shrimp and vegetables.
  7. Sprinkle the mixture with ground cumin, smoked paprika, salt, and black pepper.
  8. Cook for another 2-3 minutes, ensuring all ingredients are well coated with spices.
  9. Remove the skillet from heat and set aside.
  10. Preheat a separate skillet over medium heat.
  11. Place one flour tortilla in the skillet and sprinkle with 1 ounce (28 grams) of shredded cheddar cheese.
  12. Add a portion of the shrimp and crab mixture on top of the cheese.
  13. Top with an additional ounce (28 grams) of cheese.
  14. Fold the tortilla in half, pressing down gently.
  15. Cook for 2-3 minutes on each side, until the tortilla is golden and cheese is melted.
  16. Repeat the process with remaining tortillas and filling.
  17. Cut each fajita roll into halves or thirds.
  18. Serve with a dollop of sour cream and a sprinkle of chopped cilantro.
  19. Garnish with lime wedges on the side for squeezing over the rolls.
